Garden Salad with Avacado dip | Green Salad with Guacamole

This is a very refreshing salad with a variety of veggies and a creamy dip known as the 'Guacamole' made with Avocados. Avocado is another nature's superfood, gaining popularity among the foodies and featured in everything from main dish to dessert. It is packed with nutrients and heart-healthy compounds which can help with controlling cholestrol, high blood pressure and blood sugar among others. This recipe idea is conceived by DH who is a real foodie with lots of creativity. It was a hit at home with everyone munching on the refreshingly crisp, lemon-infused goodness. Serves - 4


Ingredients:-

For the Guacamole:-
Ripe Avocado - 1
Green chilli - 2
Corriander leaves - 1/2cup, packed
Garlic pod - 1 (optional)
Lemon juice - 1-2tblsp (adjust to your preferance)
Salt - As needed

For the Salad:-
Green and red leaf Lettuce - 1cup, washed and torn into bite-size 
Zucchini - 1/2 cup, diced
Red, yellow & green capsicum - 1/4 cup each
Babycorn - 4,cubed
Cherry tomatoes - 5, halved
Lemon juice - 1 tblsp
Italian seasoning - 1 tsp (optional)
Salt - as needed
Black pepper powder- 1-2tsp
Olive oil - 1tblsp

Method:-

1.  To cut the avocado, run a knife around, slicing it top to bottom and back to the top. Gently twist to separate the two halves of the fruit, exposing the flesh and the seed. Slide the knife around the seed and it pops out. Now, cut the avocado into cubes.

2.  In a blender, add the cubed avocados with green chilli, corriander leaves and salt. DO NOT add water. Give it a whirl until creamy. Squeeze the lemon juice and mix well. Guacamole is ready.

         

3.  For the salad dressing, combine olive oil, salt, pepper powder, lemon juice and the guacamole and whisk well

4.  Toss in the veggies so that the dressing is coated uniformly.

          

Plate it on the side for a yummy Garden fresh salad!
