Bhel-Puri is the most popular among Chaat varieties that even though its origin are in North-India, it is now served in almost all Restaurants and Snack bars throughout India. Again, Bhel Puri can be low-fat and nutritious if Sev is cut down and lot of veggies and sprouts are added. I had earlier shared a healthy Sprouts Bhel also. Only one point to remember is that Puffed rice or Pori should be tossed in just before serving so that Bhel Puri tastes fresh and yummy.

Theme - Chaat Special
Preparation time - 10mins
Serves - 2
Ingredients:
Puffed rice / Pori - 1cup
Homemade Baked Papdis - 3-4, crushed
Potato - 1, boiled, peeled and cubed
Green Chutney (Mint-Coriander) - 1-2tblsp
Sweet (Tamarind-dates)chutney - 1-2tblsp
Chilli powder - 1/2tsp
Chaat Masala - 1/2tsp
Black salt - 1/2tsp
Roasted cumin powder / Jeera powder - 1/2tsp (optional)
Onion - 1/4cup, finely cut
Tomato - 1/4cup, finely diced
Curds - 1/4cup, beaten thick
Fine Sev / Omapodi - 1/4cup
Coriander leaves - to garnish
Lemon juice - 1 squeeze
Method:-
1. In a shallow bowl, take cubed potato and add finely chopped onion and tomato to it.
2. Add both the chutneys, spice powders and black salt and mix to combine.
3. Just before serving, add the puffed rice ( pori), crushed Papdis and Sev and toss well to coat evenly. Adjust spice levels according to taste.
4. Squeeze in lime juice, garnish with coriander leaves, top it with some more Sev and serve fresh.
Relish this Bhel puri as a very healthy and filling snack as is or try variations with the addition of different veggies to suit your preferences and taste.
